the Roux all golden sherry sweet
all bubblin' round them river shrimp
or crawfish tails - jus' can't be beat
all lemon - orange over the rice
be thick or thin - don't matter, cher!
jus' pour it full and hot and rich...
that be good Etouffee right there!
